If you don’t mind the texture being a bit softer, you can leave the meat in the broth. It will also make it more flavorful.

It was delicious. I followed the recipe pretty closely, but had some beef broth that was ‘best by” 2 months ago, so I subbed half the water for beef broth and reduced the fish sauce to 1 tbsp to account for extra sodium. I also tossed in some carrots cause I had some limp ones lying around I wanted to use up. Main comment is, I would totally skip the beef chuck completely as it was super dry compared to the super tender flank. I got flank from a non-asian butcher, so it had a huge marrow bone in the center (similar to osso bucco cut I think) and it worked great. The broth was insane, better than most restaurants in the bay area (we are seriously lacking in beef noodle soup here).5 stars
