In reply to Bruce. Hi! I've been searching for a comment that had used the vinegar and finally found yours. So far, I've heard that both with and without are good, but how did using vinegar alter the taste? One comment said that it gives a "Midwestern" taste, but what does that even mean? Would love to hear your thoughts on adding the vinegar.

This chili recipe is in our regular rotation and we never get tired of it and I slightly modify it based on what we have and what’s in season, etc… Sometimes I will change up the type of beans used. I always double the beans and use extra tomato paste. This time I added some corn. It is just so good! Other favorite toppings are sour cream and green onions but we didn’t have any this time.

I’ve been making my version of my Mom’s chili for decades. My husband wanted to kick it up a notch. He took this recipe to work and finally won his company’s cook off. We make Texas chili, so no beans and EXTRA chili powder (our own blend). The umami stock addition really makes it for me. After the pressure cook I then slow cook for 2-6 hours depending on timing. Thanks, for the recipe. Instant Pot Duo Crisp+ air fryer.

This is the tastiest chili I’ve ever made, wow! And so easy too. I added some smoked bacon as I had it to hand, and added a dash of red wine but mostly I followed to the letter. My friend said it was the best chili he’s ever had. I do think the 2 tbsps of chili powder was a little too hot for me, next time I’d probably only add 1, but it was so good I devoured it anyway and let it burn. Thank you for this, I’ll be making this forever!

In the uk we spell it chilli. I think it’s fair to ask why the British English spelling isn’t recognised.
Love the recipe btw. Last night I realised I had no fish sauce or soy sauce and so I used 3 tablespoons of Worcestershire sauce. It was delicious.
