I have some left over Tuscan chicken (another great Amy & Jacky recipe), and some lasagne noodles. Sadly, not the instant kind. So I’m going to try a tweak that I learned by reading some Kenji Lopez Alt recipes for presoaking your pasta in very warm tap water for 30 minutes.
I will let you know how this turns out. I know what my family and I will eat tonight!

I made the Tuscan Chicken according to their recipe, using boneless skinless thighs. That recipe made enough to make the lasagne twice. Each time it was heavenly!! We used tomato sauce with the chicken and did the spinach with the cottage cheese mixture with sour cream added (the recipe calls for ricotta cheese but we prefer cottage cheese). Put it under the broiler in the oven for a few minutes. Yum 😛5 stars

I now add more sun-dried tomatoes, spinach and mushrooms to the original Tuscan Chicken recipe. If there’s too much left after 1st meal and lasagne, it makes a 3rd dinner. (Yea!)
So far, all of Amy+Jack’s recipes work well. Their yogurt #12 recipe is made weekly here. Thank you for being so meticulous!5 stars

It most likely is the noodles. I recommend cooking the whole Lasagna for another 8 – 10 minutes.

I used Gluten free oven ready lasanga noodles but they remained uncooked after the cook time and natural release. (I followed your recipe exactly minus the gluten free noodles) I have left over lasanga supplies and want to try again. Was it the noodles? If so, what do you recommend as the cook time?

I didn’t have Tuscan chicken so I substituted a cooked rotisserie chicken from my local store. I sauteed some butter, garlic, mushrooms, sun-dried tomatoes, and spinach along with the chicken and some store bought Alfredo sauce. That’s what I used as the chicken filling. Thank you for the idea of a white lasagna! 100% delicious.5 stars
