The white chili is yummy. Took a bit of time in prep. Will double next time as the recipe only makes 6 cups. Actually got better each day. Just finished up today, day 4!

Very nice! My first time buying some of these peppers and first time roasting them! They smelt amazing.

I didn’t have coriander seed so omitted it, but it still tasted very good! The corn especially gives it nice little pops of sweetness.

Would make this again.

First meal was a white chicken chili and a major hit in our house. Even used frozen chicken because I was too hungry to wait for it to thaw!

I made this and it is fantastic! I neglected to roast the peppers as I chopped them up while preheating the broiler! Old guy memory I guess. Will be making a double batch next time for sure. Very easy recipe and now a favorite!

I strive for low carb recipes. If I chose to omit the corn. how should I adjust the rest of the ingredients so it is not too soupy? I love a white chicken chili, but wondered if it would be thick enough without the addition of corn. Thanks!

We really enjoyed this chili – muy caliente! I used boneless, skinless thighs because that’s what I had in the house – worked very well. My only comment – serves 6-8?? My husband and I finished the whole batch! Admittedly, we are big eaters, but I don’t see how this could be a meal for any more than 3-4. Loved it!

I made the white chicken chili recipe, twice in less than 1 week! This time, I am smarter and made DOUBLE the recipe. I hope this lasts my hubby and me more than 2 meals! We eat way more than the suggested serving size. 😳😂
