This explanation is not correct. When pressure is released, the pressure inside the pot will drop from about 15 pounds per square inch above atmospheric pressure, depending on the release valve setting, along with the saturated steam pressure drop to 0 psig, steam temperature will also reduce to 100 deg. C. Which will be cooler than the food temperature. Localized ventury effect, lower pressure only happens inside the pressure release part, and has no effect on anything outside this part. However any liquid inside the food will boil quickly as it’s vapour pressure would be above the now reduced pot steam pressure, and this may affect food. Sudden steam bubbles inside food could change the texture ? PS. I was an engineer working with coal generating station steam cycle.

The floating valve was most likely just stuck in place. It does happen sometimes and a little shake should make it drops.

The recipe calls for natural release. I had more liquid in it so I waited for an hour but floating valve didn’t dropped. I tried quick release but no steam came out. I pushed the pin and it dropped. I am scared to use it again. What should I do if it happens again?

Another way is to turn the venting knob just a bit to allow the steam to release gradually after 25 minutes.

Yes. I had filled the full pot bc I have a big family. The full natural release would have been forever then bc it was already over 25 mins.
